Menu Plan Monday Spring

Ok, so week one of officially planning my menu was interesting to say the least. I realized that it really doesn’t work for us to plan to eat a certain meal on a specific night. So this week, I will be listing our meals according to type and then I will choose from the list based on the day. I’m hoping this works better than last week.

In other news, the girls go back to school in two weeks…..what….! In preparation, the girls and I spent some time on Sunday sorting school supplies, stuffing backpacks and checking items off their supply lists. It’s amazing what a second and third grader need for school. Thank goodness I finished up school clothes shopping in early July or I would have been in a panic! We also put together their lunch boxes for the school year. They were super excited about their new lunch containers. I will write more about their new lunch box system soon.

I have made it my mission this coming school year to pack my girls a healthy lunch from home at least 4 out of 5 days. My inspiration comes from the ever awesome Lisa at 100 Days of Real Food. I first came across Lisa’s blog just over a year ago while researching ways to eliminate processed food from my family’s diet. Lisa is a passionate proponent of home packed school lunches as a powerful tool to improve our kids health. She hosts a weekly school lunch roundup where her readers can link their own kids school lunches. You can find me sharing my school lunch journey there each week.

Here’s what we will be eating this week:

( My husband and kids don’t like to repeat breakfasts in the same week.)
Oatmeal, fruit
Yogurt parfaits
Breakfast burritos
Eggs, toast
Blueberry pancakes, bacon
Breakfast casserole, fruit


Dinner  leftovers
Grilled ham and cheese sandwiches
Tuna pasta salad, tomato wedges, fruit
Chicken cobb salad (*using leftover grilled cilantro lime chicken)


Beef Gyros, homemade pita bread, homemade tzatziki sauce, Greek rice *I’ll prepare the meat in the crockpot
Roasted turkey breast, Homemade rice a roni, harvest green beans *we didn’t get to this last week
Turkey tacos with squash, homemade guacamole, Mexican beans
Pesto Salmon, roasted brussels sprouts, baked sweet potatoes
Grilled cilantro lime chicken, red beans and rice, roasted asparagus
Burrito bowls (using leftover beef gyro meat and cilantro lime chicken), homemade pico de gallo


My Weekly Green
Lettuce for gyros and burrito bowls
Kale for burrito bowls (I sneak this in)
Avocado for chicken Cobb salad, burrito bowls and guacamole
Green beans
Brussles sprouts
Basil for pesto salmon
Cilantro for grilled chicken
